Blueberry Oat Protein Pancakes

Having a protein-packed breakfast is an excellent start to your day. My blueberry oat protein pancakes give you just that, and they’re delicious too. Enjoy! -Stephanie

Ingredients

1 1/2 cups old-fashioned rolled oats
1 serving plant-based vanilla protein powder (I love the Juice Plus+ Complete brand).
2 eggs
1/2 cup unsweetened almond or coconut milk
1 tsp vanilla extract
2 tsp baking powder
1/4 tsp ground cinnamon
1/8 tsp salt
3/4 cup of fresh or frozen blueberries, thawed
Coconut or light olive oil for cooking

Directions

Add all the ingredients to a blender, except the blueberries, and blend on high until smooth. Let the batter sit for a few minutes while you heat up your pan. Lightly coat the pan or griddle with the oil of choice on medium heat. Once the pan is hot, add 1/3 cup of batter to the pan and top with blueberries. Cook for 2-4 minutes until bubbles appear. Flip and cook until golden brown on the bottom. Wipe the pan clean and repeat. Yields 8-9 pancakes.
