Classic Hummus
Classic hummus is my go-to for quick and healthy snacks. I am a big snacker, so this guilt-free classic hummus helps me stay away from chips and other unhealthy snacks. This homemade hummus is super fresh, tasty and preservative free. You’ll hold your nose up in the air as you pass by the deli section at your grocery store! Yes, I am a hummus snob.
1 ½ cups cooked dry chickpeas, a.k.a. garbanzo beans. Or 1 (15 oz) can, drained. The Goya brand is amazing in dry or canned.
¼ cup tahini
¼ cup fresh lemon juice
2 tablespoons plus 1 tsp extra-virgin olive oil
1 medium garlic clove, minced
½ tsp ground cumin
½ tsp salt
Cook chic peas until tender. Set aside. Combine the tahini and lemon juice in a food processor. Process at high speed for 1minute. Scrape the sides and bottom of the bowl, then process for another minute. Add the olive oil, cumin, garlic, and ½ tsp of salt. Process for 1 minute, and scrape the bowl again. Add half the garbanzo beans and process until it is smooth. Scrape the sides and bottom of the bowl, then add the remaining garbanzo beans and process until creamy and smooth. Add 3 tablespoons of cold water while running the food processor until you reach your desired consistency. Store for up to 1 week.
