Dalanie’s Brownie Bites
1 1/2 cups pitted dates (1 cup hot water to soften)
3/4 cup melted coconut oil (cooled)
2 eggs
1 tsp vanilla extract
3/4 cup cocoa powder
1/2 cup, plus 2 tablespoons, all-purpose flour
Grease or line an 8×8 baking pan. Preheat the oven to 350°F.
In a food processor or blender, puree the dates and hot water until smooth. First, make sure you purchased pitted dates! I made this mistake once, and nearly broke my food processor. Yikes! Measure out a cup of the paste and transfer it to a large bowl with the coconut oil. Cream together until smooth.
Add the eggs, one at a time, then vanilla extract, mixing until fluffy and smooth. Add the cocoa and flour, and mix on low until well combined.
Spread batter into prepared pan, smoothing with the back of a spoon. Bake for 18-22 minutes or until edges are set. Allow the pan to cool. Indulge guilt-free, and be sure to share a few of these Brownie Bites with your friends!
